Michigan’s Best Local Eats: Smoked pork tacos, baby back ribs on the menu at Pit Boss Smokehouse
GENESEE COUNTY, MI — Residents looking for a bite of smoked pork tacos or baby back ribs can give the items at Pit Boss Smokehouse a try.
The food truck that travels around Genesee County is owned by Brent Thomas.
Among the tasty options include a smoked pork sandwich, smoked pork nachos, smoked pork hand cut fries, smoked pork 5-cheese mac, smoked brisket sliders, smoked brisket egg rolls, spicy shrimp tacos, and a chicken bacon ranch wrap.
“I’ve always been into cooking,” Thomas said. “I was an ironworker for 20 years and had a couple injuries. When I had to retire from there, this was my next step.”
One of the biggest dishes is the 5-cheese mac, Thomas said, that includes smoked pork and hand-crafted mac, homemade sour cream, and jalapenos.
Thomas caters at weddings, events, and open houses over the summer and at a couple deployment parties for those in the military.
He refers to his customers as his “favorite foodies,” and also offers Greek pasta salad (cold or warm), meatless option, along with chicken or eggplant parmigiana.
On Friday, Dec. 2., Pit Boss Smokehouse will station at Linden’s Holiday Happening Frosty Parade & Fireworks beginning at 5 p.m.
The truck also will be on hand at Creasey Bicentennial Park in Grand Blanc Township for the “Holiday Walking Night” event starting at 5:30 p.m. Friday, Dec. 16.
“I like meeting new people,” Thomas said. “We get a lot of compliments and I enjoy that for sure.”
